Pumpkin Cheesecake Bars

Crust:

1 cup all-purpose flour \

1/3 cup packed brown sugar | - combine to form crumb mixture.

5 Tbsp. soft butter /

1/2 cup pecans - chopped (add last)

Reserve 3/4 cup of crust to use for topping. Press remaining mixture in 8 x 8 in. pan. Bake 350 for 15 minutes. Cool slightly.

Meanwhile combine :
Filling:
1- 8 oz. package softened cream cheese

3/4 cup sugar

1/2 cup solid pack pumpkin

2 eggs, lightly beaten

1 1/2 tsp. ground cinnamon

1 tsp. ground allspice (you could probably use nutmeg and/or ginger instead)

1 tsp. vanilla

Pour into baked crust. Sprinkle with topping. Bake 30 - 35 more minutes (till knife inserted comes clean)

additional notes: You can double the filling recipe and make a 9x13 pan instead (only 1 1/2 the crust). I usually add a little more spice to it with some nutmeg and cloves or pumpkin pie spice. It is a fall anytime favorite at our house.
